Masala is defined as 'a varying blend of spices used in Indian cooking'. Green Indian masala usually comes as a paste but here we've taken all the ingredients found in that paste and combined them together to make a dry rub. It has an intense but utterly delicious heat and will work as a dry rub on meat and fish or as a wet marrinade. You can also add it to home made curries as you would with your usual spice mixes.
